Recipe
Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper and Extra Virgin Olive Oil with butter lettuce salad, grilled veggies, steamed spinach and mashed potatoes.
What You’ll Need:
1 Package Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper and Extra Virgin Olive Oil
Butter lettuce
Vegetables For Grilling (we chose carrots, asparagus, and eggplant)
Spinach
Garlic
Potatoes (you can use sweet potatoes for an even healthier meal)
Preparation (Makes 2 servings):
Bake salmon until thoroughly cooked through. (Usually 15-20 minutes depending on your oven.)
Peel, boil, and cover 3 potatoes on high heat for 15 minutes, drain and mash. Add salt and pepper for flavor. Skip the butter!
Add 2 inches of water to a medium saucepan with 2 inches of water, and fit with a steamer insert (if possible). Bring to a boil. Add spinach and reduce heat until it’s simmering. Add one clove of garlic, finely chopped. Cover, and steam for about 2-3 minutes until the spinach has wilted. Drain excess water.
Prepare the veggies last, as they will cook the quickest. Brush veggies with a bit of extra virgin olive oil and either sautee or grill until they’re browned, but crisp.
Chop your lettuce with a bit of extra virgin olive oil or your favorite dressing and serve.
